Healthy eggplant parmigiana


This is sooooo yummy and healthy! next time you are in the mood for something light yet tasty try this.
Ingredients:
1 large eggplant
1/2 cup fresh grated Parmesan cheese
1/2 cup breadcrumbs (i like seasoned)
1 egg
1/4 cup skim milk
1 tbsp olive oil

combine cheese and crumbs in a shallow bowl and set to the side, in a different bowl do the same with the egg and milk and whisk together. Cut the eggplant in thin slices,about 1/4 of an inch. With the olive oil, lightly coat a cookie sheet,or even better line it with parchment paper.
dip each eggplant slice in the egg mixture and then in the cheese mixture (coat both sides) then place on the baking sheet. Bake for about 20 minutes or till crisp and golden brown. Next use your favorite tomato sauce ( i will post my recipe later) and place about 1/4 of a cup of the sauce on the bottom of a baking dish or casserole dish. Place one layer of eggplant on the bottom and top with sauce, then add another layer of eggplant and top with sauce and parmesan cheese or mozzarella. bake it for another 15 minutes, or until cheese is melted and delicious! enjoy!!!

Lush-ious!


I went to lush a few weeks ago and i have been meaning to report on my finds! I bought Herbalism ( a cleanser for oily skin) a tea tree oil toner, and cosmetic warrior face mask.
I wasnt impressed with herbalism, i didnt feel like it really cleaned my face, and i felt like it left a residue. The toner tab was great! i would buy more for sure, and the mask was good and deep cleasing! one of the surprise ingredients in the mask is garlic!( since its all natural the mask has to be refrigerated)
overall, i will for sure go back to lush and find a cleanser that i really like, for now my mask and toner made up for the cleanser. Any suggestions on a good lush cleanser?

I woke up this morning in the mood for a yummy breakfast! Since im trying to watch what i eat these days ( wayyyyy harder during the Holidays) i decided to make something from one of my favorite recipe books. Cook yourself thin, is a cookbook derived from a show that was on lifetime a few months ago. The recipes are healthy but full of yummy flavor!
i made a bacon and turkey sausage frittatta! yum yum yum! The recipe calls for asparagus, but since i was out i added bell pepper instead. Any veggies that you like will be perfect and each portion is under 300 calories! try it and tell me what you think :)

For the few or many who view this blog, I apologize for not updating lately! my computer AC adapter gave up on life and i had to replace it. But the blog is back! i hope everyone had a great Thanksgiving and did lots of shopping on black friday!

Blast from the Past


Saturday mornings are a time for me to wake up late (these days that means 9am) and enjoy my daily cup of coffee before my weekly clean up time! (I should really get some saturday morning events planned...haha)
Anywhoo, i found a picture of baby Kim doing what she does best, and I thought i would share with you all. Do you have a favorite baby picture?

Kim's 5 minute face!


Ever wake up 15 minutes before you have to be somewhere? How about waking up 15 minutes before an important event where makeup is a MUST? I will share my quick and easy makeup tips for a 5 minute flawless face.
The first thing you want to do is PRIORITIZE! This is the time to pick one feature to emphasize, I pick my eyes. Next, you want to pick your supplies ( i always have a 5 min makeup bag ready to go in my bathroom drawer) This goody bag includes: Tinted moisturizer,concealer,mascara,eyeliner,metallic eyeshadow,translucent powder,and a tinted gloss.
Start off by putting on some tinted moisturizer and follow with a dab of concealer(skinflash is a good product to use in a hurry, for concealer and primer all in one). Next dust on some translucent powder and you are ALMOST done! Apply a little metallic shadow on your browbone and the inner corner of your eye, to highlight and to make you seem more awake. Now its time to line your eyes, i line the top outer corner and the bottom waterline for a sublte cat eye (think angelina jolie)
Apply a few coats of your favorite mascara, and a slick of a tinted gloss to complete your fast but fabulous look! and if you have 6 minutes, then remember that a little blush goes a long way. This look is fast and easy, but the more you practice the easier and faster it will be.

Dior Skinflash Radiance Booster Pen


This might just be my all time favorite product! Why, you might ask? I love it because it does everything it promises and more. Skinflash can be used as an eyeshadow primer, hihglighter, concealer, and line filler! The texture is light and not sticky, doesn't crease and a little goes a long way. I won't do my eye makeup without it, and if i want a really defined and sophisticated red lip, skinflash is a must! it is only about $34, and well worth it!

Yummy Bite! Spaghetti Squash


In the words of Rachel Ray, Yum-O! That is one of the many expressions i think of when i think of this delicious and versatile veggie! Though it may look a little odd to some(stringy like spaghetti), once you try it there is no going back. Try this simple recipe and tell me if you like it?

Ingredients:
1 Spaghetti Squash
2 Tbsp Butter
pinch of nutmeg
Salt & pepper to taste

Start by pre heating oven to 350 degrees, next puncture squash with a knife all over (i stabbed mine about 10 times)haha, Set in the middle of the oven rack and roast for about one hour. After the squash is cooled to your liking slice it in half length wise and remove seeds. With a fork gently scrape all along the edges of the squash to shred into strands, After that step empty shredded squash into a baking dish and add butter, salt, pepper and pinch of nutmeg. Stir and put into a baking dish and bake until warm, after that you are ready to eat the yummy squash!

Lorac Double Feature concealer


This is my current concealer obsession.....
The Lorac concealer/ highlighter duo is handy and innovative. The concealer is in a tube form (like a lipstick) and it has a roller ball at the end for blending, which is my favorite part of the whole thing. The concealer stays on my face instead of getting smudged away by my fingers, and i found that i didnt have to use as much concealer because of the roller. The other part of the product is a shimmery highlighter, which is nice on cheeks and browbone but i found it a little too runny for my liking.

Good Read: Style From A to Zoe


I LOVE this book! it talks about everything from fashion, to how to shop for vintage, to interior design! I fell in love with Rachel Zoe when i found out she was the person responsible for the hippie chic look that nicole Ritchie was sporting a few years ago(and still does)Nicole even went on to design her own line of vintage inpired accessories (House of Harlow)....Anywhoo.... its a great book and it is broken down into 8 chapters from "excessories" to "Glamour A to Zoe". It really shows a different side of Rachel and lets you into her glamorous life from age 4 and on!
Go get it if you get a chance!
